Then, a sensory evaluation is carried out by a tasting panel to classify the oil as extra virgin. In extra virgin olive oil, the median ofdefects must bezero and the median of the fruity attribute greater thanzero.
The other control is the organoleptic, a tasting panel should catalogue that oil as extra virgin, for which the oil should be provided with a median of the defects equal to zero and positive median fruitiness.
